Wikis
The majority of wikis here are TiddlyWikis, and ccTiddly is a serverside implimentation of your standard standalone TiddlyWiki. Various TiddlyWiki versions are here to try. Although you cannot change the content, you can experiment with doing it.
The serverside Twiki was the most time consuming to setup and learn. (There is no login setup for that one.) For ease of setup and use, I'd recommend using any of the others. I'm a big fan of them.

To obtain one of the standalone wikis, right click on the desired link and choose "Save Links As" or whatever is equivalent with your browser. Save it to your desktop or wherever you like. It's ready to use as a single, self-contained file.
